Another 4th of July is fast approaching, so it’s time to plan some all-American treats for your patriotic
picnic. Here’s a star-spangled recipe for Red, White, and Blueberry
muffins that’ll get your day started with a bang:
- 2 large eggs
- 1 cup of milk
- ½ teaspoon vanilla
- 4 teaspoons baking powder
- 1 cup of sugar
- ½ butter or margarine, melted
- 3 cups all-purpose flour
- 1½ cups blueberries
- 1½ cups raspberries
Preheat oven to 350°. Prepare muffin pans
with non-stick cooking spray, or line with muffin papers.
In a large bowl, mix together the eggs, milk,
vanilla, baking powder, and sugar until well blended. Add the melted butter,
and mix well. Stir in the flour with a spatula until it is evenly moist. Then
gently fold in the blueberries and raspberries. Fill the muffin cups 3/4 full
of batter, and bake for 25 minutes, or until the tops are lightly browned.
Let the muffins cool for 5 minutes before
removing them from the pan. Then let the fireworks begin!
