Happy Easter! Here’s hoping you have
a wonderful, sun-filled day, and that the Easter Bunny leaves lots of treats
for you and yours. If you’ve got leftover hard-boiled eggs, lucky you--not only
are they incredible and edible, they’re also oh-so good for you. Eggs,
especially the yolks, are loaded with nutrients that everybody needs. It's no
yolk--eggs are a terrific source of:
- B vitamins, which boost germ-fighting immunity
- perfect protein for muscle development and lasting energy
- vitamin D, which builds bone and boosts memory
- carotenoids that are critical for preventing age-related macular degeneration, the major cause of blindness in adults. In fact, these sight-saving nutrients are absorbed more easily from eggs than from green vegetables.
Enjoy your leftovers in this
dee-lish Egg Salad Sandwich recipe that bulks up the goodness of eggs with
crunchy veggies:
- 1 hard-boiled egg, chopped
- 1tbsp. light mayonnaise
- 1/4 cup chopped celery
- 1/4 cup chopped red radishes
- 1/2 cup diced, peeled cucumber
- 1/8 tsp. celery seeds
- dash of salt
- dash of freshly ground black pepper
- 2 slices whole grain bread
- 2 slices tomato
- Lettuce
In a small bowl, combine the egg, mayonnaise, celery,
radishes, cucumber, celery seeds, salt, and pepper. Stir until well blended.
Pile the mixture on 1 slice of the bread, and top with the tomato, lettuce, and
the remaining slice of bread. Cut the sandwich in half and enjoy your egg!
