I love Memorial Day weekend. The weather is usually just right, and Monday is the perfect time for a backyard barbecue, since everyone has the day off from work.

But don’t let your guests munch on junk while they’re waiting for the grill to heat up. Instead, treat them to this lively mango salsa—it’s delightful! Mangoes are packed with vitamins A and C, which gobble up free radicals, substances that may contribute to cancer and heart disease. And that’s not to mention that they’re absolutely delicious. Here’s the quick ‘n’ easy recipe:

Combine 2 cups of cubed mango, ½ cup of chopped red onion, 1 minced jalapeno pepper, 1 cup of peeled, diced cucumber, and 3 tablespoons of chopped fresh cilantro leaves in a bowl. Gently stir, then squeeze in the juice of one lime, and season to taste with salt and pepper.

Serve the mango salsa with flaxseed chips. They’re just as tasty as their more fattening tortilla cousins—but even die-hard junk food junkies will reach for more!
