Happy Easter!

And thanks, Easter Bunny, for all those yummy, hard-boiled eggs you’ll leave behind this Sunday. Eggs are one of the richest forms of natural choline, a nutrient our bodies need that’s essential for brain motor function and memory. And it’s easy to get cracking—a two-egg meal doubles blood choline levels.


If you’re an older adult, you need more choline, protein, B vitamins, vitamin D, calcium, and zinc than younger people do. But since you also require fewer calories, you may not even be meeting the Daily Values, let alone getting bonus amounts. That means every bite has to be jam-packed with nutrients. So it’s eggs to the rescue!


Remember egg salad sandwiches when you were a kid? They were a little egg and a lot of mayo. Here’s a big, fat sandwich that bulks up your eggs with good-for-you veggies.


In a small bowl, stir together 1 chopped hard-boiled egg, 1 tablespoon of light mayonnaise, 1/4 of chopped celery, 1/4  cup of chopped red radishes, 1/2 cup of diced, peeled cucumber, 1/8 teaspoon of celery seeds, a pinch of salt, and a dash of pepper. Pile the mixture on 1 slice of whole wheat bread. Top with tomato slices, lettuce, and another slice of bread.
