Make this perfect pecan pie a traditional holiday sweet

By now we all know that nuts are a heart-smart snack. So pack your holiday pies with plenty of pecans! This easy recipe is one of my family favorites because it mixes the mighty nut with cholesterol-clobbering oatmeal. Now, don’t get me wrong—this Oatmeal-Pecan Pie is certainly not a health food, but the good-for-you ingredients won’t make you feel too guilty about reaching for a second slice!

1/2 cup of butter

2/3 cup of sugar

2/3 cup of dark corn syrup

2/3 cup of rolled oats

2 eggs

1 teaspoon of vanilla

1 9-inch piecrust

1/2 cup of whole pecans

Whipped cream (optional)

In a saucepan, melt the butter. Remove from the heat and stir in the sugar, corn syrup, and oats. Then stir in the eggs and vanilla, and pour the mixture into the prepared crust. Top the filling with pecans, and cover the edge of the pie with foil. Bake at 325°F for 25 minutes; remove foil and bake for 20 to 25 minutes more. Top with Cool Whip® or whipped cream.

Merry Christmas!
